I remember visiting my grandma during the holidays in Karatina, Nyeri County. The sight of thriving banana trees in our backyard, just before the coffee farm, was a spectacle. Her healthy approach to satisfying high starch-content meals like Matoke resonates with little old me. African Banana Fritters from Accra and Matoke from Uganda are popular African cuisine with bananas as a common ingredient.

1. BANANA INSPIRED RECIPES.

a) How to cook Accra Banana.

Ingredients :

  • 5 overripe bananas
  • 2 pounds grated cassava
  • 2 teaspoon salt
  • 3 tablespoon sugar
  • 1 cup cornmeal
  • 3cups wheat flour
  • 4 teaspoon baking powder
  • Oil for deep frying

Instructions :

  1. Peel the bananas . Put them in a bowl and mash them to form a thick paste
  2. Add grated cassava , flour , sugar , salt , baking powder and cornmeal. Mix well until the mixture is smooth
  3. Subdivide the mixture into small bits . Form a small ball
  4. Heat the oil in a frying pan over high heat
  5. Gently place the ball into the boiling oil. Continue the process of forming round like balls while adding to the oil but not overfull .
  6. Pan-fry for about 10 minutes while you stir time and again . Take the Accra Banana Fritters out of the oil when they’re golden brown .
  7. Repeat forming balls with the remaining mixture and frying directions to make more Accra Banana
  8. Serve with lemon tea , best enjoyed warm

b) How To Cook Banana Fritters.

Banana Fritters require less than ten ingredients to prepare. You combine mashed overripe bananas and grated cassava with flour. Subdivide the mixture into small bits and deep fry. Fritters are crunchy on the outside with a soft inside. These tasty sweet snacks are a lovely accompaniment to lemon tea. For a hearty meal, try Matoke with beans or beef stew.

Matoke is East African Highland bananas enjoyed greatly across East Africa, Uganda in particular. It takes 40 minutes or less to prepare. Ample butter, sauteed onions, garlic, cumin, tomatoes, and salt brings out a spicy buttery taste.

You can use ripe bananas to make roasted strawberry banana bread or chocolate chip banana bread as dessert. You can also grind ripe bananas in a blender for a healthy choice drink.
